Legendary Foods Ltd. is a social enterprise dedicated to the sustainable practice of farming edible insects. With a farm in Kumasi, Ghana, Legendary seeks to farm locally desired insects as a way to address food insecurity. Legendary farms the palm weevil larva, a local delicacy that has been traditionally harvested. Legendary seeks to rapidly scale its production, co-develop packaged products, take advantage of export opportunities to other West African countries and to advance research on the palm weevil larvae while building a conscious company.
Role description:
Legendary is looking for a driven, persistent, creative, collaborative critical thinker to be our products manager. The primary goal of the products manager is to develop shelf-stable, desired, nutritious palm weevil larvae-based products and to build the process flow & commercial production plans from post-harvest to a packaged product that is ready to be shipped or distributed (for both current and future scale).
The role will also involve being responsible for statutory and elective certifications as well as nutritional testing and quality control of all processed & manufactured products. As such, the manager will work closely with the operations team and work to build an ecosystem of co-packers and production or processing partners when possible.
The product development manager will have participation in the business development activities of the company, helping to build out the future state product lines of the company. This role will also involve collaboration with key research partners.

The manager will be responsible for:
- All processing of products from fresh palm larva to final packaged products (manufactured, processed and food service) – this means you will be managing multiple product lines, multiple SKUs
- Ensuring food safety & quality of all products
- product ideation
- product prototyping
- creating samples & prototypes for in-house testing or external guests
- Conduct sensory and market testing
- customer acceptability

The manager is expected to manage these projects with the goals of cost-efficiency, product differentiation and consumer uptake. This work will result in a variety of deliverables and will include SOPs for in-house staff, content and specifications for agreements with processing partners, process flows, costing estimates, future planning, budget compilations.
The chosen candidate will be required to troubleshoot and work around the geographic constraints of the organization (not being in Accra, Ghana).
The chosen candidate will also have to have flexibility with their work schedule and may be required to work on the weekends.
The chosen candidate will also direct product development projects in collaboration with the organization’s partners such as KNUST (Kwame Nkrumah University of Science and Technology). Qualifications and skills
- The ideal candidates would have a Master’s degree or above degree in food science or an equivalent with two or more years of workexperience in food processing, agri processing or food/beverage manufacturing
- 3+ years of Industry experience is a must (cannot be only academic)
- 1.5+ years of management experience of a team size of larger than 4 is a must
- Familiarity with nutrition and food safety testing as well as food safety certification

- Previous experience with the FDA and GSA
- Ability to take projects from conception to completion, including conducting statistical analyses and critical interpretation of research results
- Excellent oral and written communication skills and presentation skills
- Good organizational skills and attention to detail.

- Must be able and willing to travel within Ghana and potentially elsewhere.
- Ability to be adaptable, a creative & critical thinker
Additional Assets (not necessary but make for a strong application)
- Experience with exporting food products
- Experience with organic & halal certification
- Strong passion for sustainability and/or food security
- Interest in novel food sources and agriculture
- Managing multiple product lines

Compensation: Job Vacancy At Legendary Foods Limited
Compensation commensurate with experience. Compensation will be part base + part bonus based on targets. Health insurance available after probation period ends.
